In recent years, snow skin mooncakes have been becoming more popular as youngsters are breaking away from the traditional ones. Just so you know, snow skin is actually made of a mixture of glutinous rice flour and other flour while the fillings range from traditional lotus paste to more contemporary yogurt-based filling to suit the taste buds of millennials.
However, a recent report revealed that snow skin mooncakes are easily contaminated with bacteria and germs due to the lack of heat in the manufacturing process and the ingredients used. Case in point?Authorities in China recently conducted checks on 153 batches of mooncakes and three of them were found to be contaminated. Not surprising, all three batches were snow skin mooncakes.
An expert in this industry pointed out that since snow skin mooncakes have less oil, sugar and salt, which are natural preservatives, the product will have a shorter shelf life compared to traditional mooncakes. On top of that, snow skin mooncakes don’t go through the process of baking under high heat and therefore, bacteria cannot be killed effectively.
Having said that, you can still enjoy snow skin mooncakes as long as you know how to store them. Normally, this type of delicate mooncake should not be stored at room temperature for more than two hours. Ideally, you should take what you need and keep the rest of the mooncake back in the fridge using the container provided by the manufacturer.
If you’re ordering some from your friends or neighbours, it’s best to consume them within a day or two because chances are, their kitchen is not as sanitised as the factory. Not to mention, they are not regulated by the authorities!
